SUNNY VEGGIE FEST (Allan Driggs)

2 large or 3 new red potatoes, quartered or in sixth’s
2 large carrots or large handful of baby carrots
1 large onion, quartered
Herb Blend
Olive oil

Coat the bottom of a dark cooking pot with olive oil. Wash and quarter 3 small red potatoes or cut 2 large red potatoes into sixths. Place the potatoes face up in the bottom of the pot then spray or brush with olive oil. Sprinkle herb mix on them to taste. Quarter onion and add to pot. Cut the large carrots into spears and add to pot. If using baby carrots just add them to the pot. Spray or coat onions and carrots with olive oil and sprinkle with herb blend. Cover the pot and place in solar oven. Cook undisturbed for 3 hours.
