SMOKEY TOMATO MAYONNAISE

1/3 cup Smokey Dried Tomatoes, well packed
1/2 teaspoon garlic powder
3/4 cup mayonnaise

Soak tomatoes in hot tap water for 5 minutes. Drain well. Chop fine. Stir chopped tomatoes and garlic powder into the mayonnaise until well blended. Refrigerate at least 30 minutes before serving. Makes about 1 cup. Spread on sandwiches or spread on Lentil Burgers (page 54 in Pantry Cooking), Chicken Patties, or other bean or meat burgers.
