Select ripe yellow bananas without any green and few, if any, brown spots. Peel and slice about 1/4-inch thick. Tomato slicing tools with multiple blades or banana slicers work well for this. Place on dehydrator trays. Sprinkle with fruit flavored gelatin. Dehydrate at 130o for 8 to 10 hours or until dry. Bananas may still be pliable or leathery when dry but should have no pockets of moisture in them. Remove from trays and dry heat process in canning jars for longer shelf life.
