Q.  Where can I find Junket rennet tablets? (see Cottage Cheese)

A.  Look in your grocery store where the ice cream toppings are sold or order directly from Junket.

 

Q.  What are Chinese vegetables? (see Chinese Chicken and Rice Casserole p. 65, Pantry Cooking)

A.  La Choy makes Fancy Mixed Chinese Vegetables. It has bean sprouts, bamboo shoots, water chestnuts, mushrooms, and red bell pepper in it. They also make Chop Suey Vegetables which is bean sprouts, celery, water chestnuts, onions, bamboo shoots, carrots, and red bell pepper. Look for them in the Oriental section of your grocery store.

 

Q.  What is grated American cheese food? (see Chicken Enchiladas p. 59, Pantry Cooking)

A.  Grated American cheese food is a dry grated cheese similar to Parmesan in a can but it's American cheese.  You may be able to find it as Macaroni and Cheese cheese.  If available, you can also substitute dried cheese or cheese powder.

 

Q.  What is luncheon meat? (see Foil Dinners and recipes in Pantry Cooking)

A.  Canned luncheon meat is Spam, Treet, or anything similar.

 

Q.  What is pasteurized process cheese loaf? (see Cheese and Chive Mashed Potatoes, Ham and Cheese Noodles p. 77, Olive Cheese Sauce p. 77, and Tomato Macaroni and Cheese p. 58, Pantry Cooking)

A.  Pasteurized process cheese loaf or cheese spread loaf is Velveeta or anything similar.

 

Q.  What is bottled process cheese sauce? (see Chili Pie p. 59 and other Tex-Mex recipes in Pantry Cooking)

A.  Bottled process cheese sauce is Cheez Whiz or anything similar.

 

Q.  What if I can't find black beans with jalapeno peppers? (see Black Bean and Rice Salad p. 95, Pantry Cooking)

A.  Substitute a can of black beans and either 1-1/2 tablespoons of chopped canned jalapenos or 15 slices of canned jalapenos.

 

Q. What is the difference between bacon flavored bits, bacon flavored pieces, real bacon bits and real bacon pieces?  (see Baked Potato Soup, Mashed Potatoes and Kraut, and recipes in Pantry Cooking)

A.  Bacon flavored bits and bacon flavored pieces are bacon flavored textured vegetable protein.  The bits are quite small and rough.  The pieces are about 3/8" square and flat.  Real bacon bits and pieces are real bacon that has been cooked, crumbled into bits and larger pieces and vacuum packed in jars or bags.  This real bacon is shelf stable in this form until it is opened.

 

Q.  What do I do with the rest of the oatmeal mixture for Cranberry Crunch? (p. 114 in Pantry Cooking)

A.  After you have the spooned the cranberry sauce into the pan, sprinkle the remaining oatmeal mixture over the top and bake as directed.

 

Q.  What is turkey loaf? (see Cranberry Turkey Loaf, Turkey Kabobs)

A.  It is a canned turkey product similar to canned luncheon meat.  It's usually made by Hormel and is called Turkey Spam.

 

Q. Now that tuna comes in 5 ounce cans, how many should I use in Noodled Tuna Patties? (p. 52 in Pantry Cooking)

A. Use 4 cans since 20 ounces is closer to 18 ounces than 15 ounces is and it's still not too much tuna to work correctly in the recipe.

 

Q. I don't like celery.  Is there another kind of soup I can use in Noodled Tuna Patties? (p. 52 in Pantry Cooking)

A. Cream of Onion soup works very well.
