CHICKEN CORDON BLUE SKY (Allan Driggs)

2 boneless chicken breasts (8 oz. each)
Deli ham slices
Swiss cheese slices
Olive oil
Herb Blend

Slice breasts and insert several ham and cheese slices. Insert toothpicks to secure the filling. Coat the bottom of cooking pot with olive oil and place breasts in the pot. Coat the breasts with olive oil and sprinkle herb blend to taste on the top. Cover the pot and place pot solar oven and cook about two hours.

Alternative method: pound the breasts thin and flat and roll the ham and cheese slices together with the chicken. Place the chicken into the pot with the seam down. Secure the ends with toothpicks.
